Strawberry Shake

1 1/2 c. almond milk, unsweetened
1/2 c. frozen strawberries
2-4 dates, pitted or 1 banana, sliced
1/2-1 t. vanilla
garnish with chocolate sauce, optional

Blend. Adjust. Enjoy!
I typically use mostly frozen fruit when making shakes. Bananas are typically half price when they are ripe. Just take them home, peel them, slice them and grab a handful when you are ready to make a shake. If you are using all fresh fruit you will need a few ice cubes. Add them after you start blending the rest of ingredients.
Almond Milk
traditional way:
soak almonds 4-8 hours, rinse
blend with water and strain
add sweetener if desired agave, honey, banana, stevia, etc.

I typically use 1/4 cup almonds for every cup of water. You can adjust this to your tastes. More almonds for thicker milk. Save the almond pulp in freezer for later use if desired.

Chocolate Sauce
1/2 c. cacao or carob power
1/3 c. agave or honey or more if necessary
1/2 t. vanilla
1 T. coconut oil

Whisk until smooth.

Best Chocolate Pudding

Was dreaming about this today. It is soo yummy. Ingredient list looks strange, but don't knock it til you try it. Interesting tidbit- I found a very similar recipe in a 50 year old diabetic cookbook.

Best Chocolate Pudding

2 ripe avocados

2 ripe bananas

2 T. cacao powder or raw carob powder, or more to taste

agave, to taste

vanilla, to taste, start with about 1/2 teas.

pinch sea salt

Place everything in vita-mix and blend. Taste. Adjust if necessary. Enjoy!

Without a vita-mix, mash everything with a fork in a bowl until well blended.

Lick bowl clean! Will last 3 days in fridge.

Mighty Omega Pesto

Made this the other day for a class. Love it! It is power packed with omegas and lots of minerals from the kelp noodles. Kelp noodles can be purchased at your local natural foods market. They are clear and absorb the flavor of any sauce you put them in. Low fat too.

Mighty Omega Pesto
1 c. fresh basil
1 c. fresh spinach
3/4 c. walnuts, soaked at least 2 hours and rinsed
1/2 t. sea salt
1 garlic clove, minced
2 T. olive oil
1 t. hempseeds
1 package kelp noodles, rinsed

Process all in except hemp seeds and kelp noodles in food processor until it looks like pesto. Mix in hemp seeds. Toss with kelp noodles. Let marinate for at least 15 minutes before serving.

Day One

I was craving berries this morning. My daughter and I made this for breakfast. I don't typically measure ingredients when I make shakes. These are approximations. Don't be afraid to adjust to your tastes and experiment!
Purpleberry Shake
3/4 c. water
1 T. raw almond butter
1/4 c. frozen blueberries
1 small frozen banana, sliced (I used 1/2 a large one today)
pinch of vanilla powder

Blend. Enjoy!
